OLD STYLE TRENDY SALAD


Ingredients:
• 1 jar cooked cheek peas
• 4 Fresh organic beetroot
• 4 Fresh organic Jerusalem artichokes
• 4 spring onions
• 1 handful lettuce
• 4 branches Basil
• 1 organic lemon Juice and rind
• 1 Tbsp pumpkin seeds
• 2Tbsp olive oil

Preparation :
1. Rinse and drain well cheek peas
2. Cut Beetroots in small cubes
3. Slice Jerusalem artichokes in thin slices
4. Slice finely spring onions and lettuce if necessary
5. Separate the leaves of the basil from the steams
6. Toast lightly the pumpkin seeds
7. Mix all the vegetables together
8. Add the lemon rind, juice and olive oil
9. Mix well and serve
