EARLY SPRING SALAD


Ingredients:
• 150g Bulgar organic
• 2 fennel bulbs finely sliced
• 175g baby spinach leaves
• 2 Oranges segmented
• ½ cucumber in cubes
• 3 Tbsp pine seeds toasted

Dressing:
• 2 Tbsp olive oil
• 4 Tbsp low fat yogurt natural
• 2 Tbsp chopped parsley or coriander fresh
• Pinch salt
• Pinch pepper

Preparation :
1. Prepare the Bulgar according to pack instructions and let it cool
2. Grill the fennel for a few minutes till tender.
3. Mix in a large bawl bulgur, fennel, baby spinach, segmented orange
4. and toasted pine seeds.
5. Put all the dressing ingredients in a electric mixer or bowl and mix well
6. Pour dressing over the ingredients of the salad and serve as a whole or in individual portions
