Ingredients:
• 1Tbs butter
• 6 organic eggs bitten
• 200g mix mushrooms
• 50g cheese Gruyere or Edam
• 2Tbs Coriander or Parsley
• 2 Spring onions thinly sliced
• Pinch turmeric
• Pinch Pepper
Preparation:
1. In a non-stick pan fry lightly thin sliced spring onions with mushrooms till all moisture is evaporated.
2. Remove onion and mushrooms and set aside
3. In the same pan pour 3 bitten eggs and let them settled in low temperature.
4. Sprinkle with turmeric and pepper
5. Pour over the mushrooms and the rest of 3 other eggs bitten
6. When only a few liquid have remain add the cheese and fresh chopped parsley
7. Fold the omelette over the tip
8. Serve hot/ warm
